No sticking, better baking:
The new meatloaf molds
from PricoPlex are a hit.
Made of premium silicone with stainless steel reinforcements, PricoPlex's meatloaf molds make work easier for employees in butcher shops, meat processing plants, wholesalers, and at fresh food counters. The biggest advantage: time savings in preparation and cleanup.
The Globus supermarket in Koblenz-Bubenheim sells two million meatloaf rolls – or as they say in Bavaria: Leberkässemmeln – every year. That's almost 5,500 a day. The snack, which sells for around one euro, is a flagship product for the supermarket chain, but it also presents challenges for the deli counter team. After all, that large amount of meat mixture has to be baked. And to ensure this process is as quick and easy as possible, the right equipment is crucial. "Globus approached us with the problem that they needed a lot of time for preparing and cleaning the metal molds," says Fabian Zanoni, Sales Manager at PricoPlex. Because the meat mixture stuck to the molds after baking, the store employees had to spend a lot of time cleaning them afterward. A release agent was also necessary before baking.
Meatloaf mold with non-stick properties developed
PricoPlex tackled this challenge and developed a new mold. "Silicone molds are well-known for baking. However, since there were no products available for professional use in the case of meatloaf, we looked at the shape and volume of metal molds and considered how we could optimize the standard household silicone mold," explains Zanoni. The company, which has been developing countertop trays for professional food presentation in Eresing near Lake Ammersee for over 70 years, solved the challenge with a premium silicone with thick walls and a stainless steel frame reinforcement. Thanks to its non-stick properties, nothing sticks when baking the meatloaf – not even the notoriously sticky pizza-style meatloaf. After use, the mold can be placed in the dishwasher without any further preparation and is ready for its next use.

"As is well known, silicone molds are well suited for baking. However, since there were no products available for professional use in the case of meat sausage, we based our work on the shape and volume of metal molds and considered how we could optimize the standard household silicone mold."

Test users were "positively impressed" by the meatloaf mold
During the development phase, numerous users from REWE, EDEKA, Globus, and other large butcher shops tested the meatloaf mold. A consultant from the EDEKA Southwest region confirms the positive feedback. "Everyone was impressed. For most testers, ease of cleaning was the deciding factor. The mold was also well-received because it is heat-resistant and retains its shape." The consultant knows from his customers that previously, when using other stainless steel molds, they had to painstakingly remove meat residue with a steel wool pad. This is no longer necessary with the new PricoPlex mold. Thanks to its non-stick properties, there's no need for a release agent during baking.

Numerous pre-orders confirm the added value
The baking results were also rated highly in the tests. Thanks to the food-safe, stable mold, the meat mixture cooks evenly and develops an appealing golden-brown crust. The meatloaf molds, with capacities of 3.7 liters (390 x 190 x 90 mm) and 2.7 liters (GN 1/3, size 325 x 176 x 90 mm), will be available from May. However, demand was high even before then: PricoPlex received more than 100 pre-orders shortly after the announcement of the new molds. This positive impression was confirmed at the meat congress in Königswinter and the EuroShop trade fair in Düsseldorf, where the new molds were presented live for the first time: "The meatloaf mold passed through many hands, and alternative uses were also discussed," says Zanoni. For example, a PricoPlex partner from Spain suggested that the mold could also be used for baking ham.
Whether it's meatloaf, ham, or something else entirely: PricoPlex molds make life easier for employees at butcher shops and deli counters. No sticking, better baking. And even if you're not making 5,500 meatloaf rolls or liverwurst sandwiches a day, the time savings are significant. When not in use, the molds stack beautifully. Thanks to high-quality materials and professional workmanship, they are also durable and maintain a perfect shape even after making a million meatloaf rolls.
